Frugal Recipe: Moose’s Fluffernutter Lite

Ever since I  lived in New England as a kid, I’ve relished one of the region’s great sandwiches: the Fluffernutter. A perfect blend of peanut butter and marshmallow cream, it tastes great. But each sandwich contains 400 calories and 33 grams of fat. Youngsters easily process this mother lode of overload. Adults don’t. For them, the Fluffernutter poses a dilemma: (1) choose epicurean delight and suffer caloric disaster; or (2) treat the body as a temple and miss out on a lot of fun.

Frugality is a great dilemma solver. It helps you get what you want for less. And it helps regardless of whether you face enticing purchases or enticing calories.

Today I share a frugal solution to the great Fluffernutter dilemma. My recipe delivers all the fluffy goodness of the classic sandwich with less than one-half the calories and one-tenth the fat. The recipe reaches this affordable result by substituting for two ingredients—rest assured, you’ll still get a full dose of marshmallow.

In lieu of bread, I use a whole wheat or multigrain “sandwich round” (also known as a “sandwich slim”). A recent addition to grocery shelves, a single sandwich round takes the place of two bread slices. Savings: 70 calories and 19 grams of fat.

In lieu of peanut butter, I use PB2, a peanut powder sold on Amazon. The powder is all that’s left after peanuts get the oil squeezed out of them. PB2 contains no artificial additives or preservatives. Simply add water. Savings: 145 calories and 11.5 grams of fat.

These adult sandwiches taste great—and they’re less filling. Whenever I eat them I’m transported back to carefree summer days watching the Red Sox on TV. Here’s the recipe. Enjoy!

Moose’s Fluffernutter Lite

1 sandwich round
2 tbsp of PB2 with water added
2 tbsp of marshmallow cream

Split open sandwich round. On one half, spread PB2. On other half, spread marshmallow cream. Press halves together to form sandwich. Serves one. Repeat process for friends.
